TYPICAL PRODUCTS FROM TRENTINO

DOP – denominazione di origine protetta – are products with trademarks from the government that guarantee the origin:

Asiago – light, tasty cow milk cheese matured for 3 -5 months or 9 months
Grana Padano – Parmesan chese with 12, 24, 36 months of maturity; the older the more intensive the taste
Provolone Valpadana – semi hard cheese with 44 F.i.Tr., 2 varieties “dolce“ (sweet) with a creamy taste and “piccante“ (spicy) with a strong, spicy taste
Garda – Olive oil made from Casaliva, Frantoio, Pendolino and Leccino (at least 80%) from 11 communities in Trentino
Mortadella di Bologna – tasty sausage made from pork which is either chopped or very thinly sliced
Spressa delle Giudicarie – cheese made from cow’s milk from the breeds Rendena (local), Bruna, Grigio Alpina, Frisona and Pezzata Rosso
Mela della Val di Non – apples from the Non Valley, Golden Delicious, Renetta Canada, and Red Delicious.


TYPICAL DISHES
The cuisine of Trentino owes ist uniqueness to the contact with the German speaking world over the centuries from which it has adopted many recipes, and to the rural area in which it is situated. Polenta, a corn dish, is served with many dishes and is cooked in a copper pan for hours. You can have roast rabbit with Polenta, spiced with pine nuts, raisins, cinnamon and cloves, Trentino roast beef with Polenta, or “Polenta smalzada trentina“ a corn dish with anchovies. Barley soup is also a typical dish from this region as well as pasta parcels ''Ravioli alla trentina'' that are filled with chicken and sausage. Patugo is a delicious vegetable purree. ''Lucanica con crauti'' is a Luganega sausage (spicy pork sausage) cooked with sauerkraut and Speck (smoked bacon). The veal spleen dumplings ''Gnocchetti di milza'' are served with celeriac and carrots. ''Smacafam'' is a buck wheat dish made with Luganega sausage. The potato and meat pie is made from beef and boiled potatoes. There are several dishes that are known all over Italy and these include “Carne salada con borlotti“, (salted meat with broad beans), Salmon Trout, Mortadella as a snack, and mushrooms. Typical desserts include apple strudel, like in South Tyrol, which dates back to Austrian influence, Zelten, a Christmas cake made from white flour, eggs, candid fruit and lots of dried fruit, “Fugàza“, an Easter cake and the “Torta di fregolòti“, a cake made from white flour, sugar, almonds, butter and walnuts. Trentino has many delights to offer….
